To use the smoker box, you’ll want to soak your wood chips in water for around 20 minutes. Then, place the smoker box on the cooking grates and fill it with the wood chips. Close the lid of the smoker box, and the lid of the grill, and in about 20 minutes the chips should have started to smolder and will begin adding smoky flavor to your food. If all the chips burn out, but you still want to add more smoky flavor, just flip open the lid and toss in some more pre-soaked wood chips.
2. If you don’t have a smoker box, you can always create a makeshift smoker pan out of an aluminum foil pan. Put the pre-soaked wood chips into the pan, and cover the pan with foil. Then, poke some holes in the foil to allow the smoke to escape. You’ll want to put the pan directly on the flavoriser bars, preferably over an unlit burner, and towards the back of the cooking area. Put the grates back on the grill, turn it on and preheat it with all the main burners on high for about 15 minutes and the chips should start to smolder. Then, set the burners to the necessary heat setting, depending on what you’re grilling.
3. You can also use cedar planks to impart smokey flavor on your grilled food. Not only does it taste good, but it looks great too! Be sure to soak the plank for at least an hour before grilling. For more information about cedar plank grilling, check out our video here.
